If I open a particular Revit model hosted on BIM360 several structural elements are missing from the model. If I view the model on BIM360 the elements are visible. If I download the source file from BIM360 and open that copy the structural elements are there. Anybody else seen this behavior?

It is likely that the revit model on BIM360 is not published with the most current version. When working from BIM360 the shared model is separate from the published model. What you are seeing on BIM360 is an older version of the model which likely had the structural elements still in the model. When you download the model from BIM360 you are downloading the published model so that is why the structural elements are there.
There are 2 ways to publish the models. In Revit when in the project you can go to Collaborate --> Manage Cloud Models and publish. If you are not in the project you can go to Revit Home Screen and navigate to the project in the BIM360 folder structure and select the model and click Publish.

Wow, this working from home thing must be melting my brain. I totally knew that but it wasn't until you wrote it down that I realized it. Thank you and sorry for wasting everybody's time.

This is why I strive to set up all my projects to use Live Linking and not the publish, share, consume option.
I've also run into issues where the automatic publish has stopped working for some reason.
Still have yet to receive a reason as to why from Autodesk.
Sadly we didn't notice it until after we submitted to the City, so we had to redo everything.
