Does anyone know how to define a slope for a structural roof beam?

You can create a reference plane in section or elevation at the t.o. beam level and assign it as the working plane for your beam to attach to.

This will work for regular steel sections (i.e. a steel shape that is like an extruded profile, like W-sections, L-angles, tubes, etc.). It will not work for open-web bar joists, however.

In Version 8.0, I am able to create a sloping steel joist by setting the 'Work Plane' to a sloped 'Work Plane' before placing the joists

Yeah I typically set up reference planes that follow my roof slopes in order to place beams under the roofs.
