I was in a sheet, and double clicked my middle mouse button. The sheet disappeared, and each time I double-middle-clicked, something else hid or appeared. Refreshing the view brings everything back, but what is actually happening when I double-middle-click? I couldn't find anything in the help to explain this feature.

From all appearances you are stopping the graphical regen of your panning motion. It isn't doing anything real, just confusing those who double wheel click to ZE in AutoCAD. ;)

Funny, that's exactly why it happened. I was helping an ADT user, and that took me 15 minutes to figure out how to move (m-space instead of mv). Then I get back to my machine, and the first thing I did was zoom extents. meh ;)
