I am just curious as to what the best method is for creating quoins.

Here is a Quoin family, though looking at it, I would probably nest it in a parametric family that worked for the whole wall height rather than one-by-one...

I have done a wrap of non-room bounding wall in the appropriate location as a veneer and then fiddled with editing the elevation. It was quick enough and modelled well.

You could probably also join geometry with the main wall so that it looked the part in plan, or simply go down the route Greg suggests.
