Is it possible to split schedules onto several 8.5x11's? My firm puts many schedules in a project manual and most of the schedules are too large to fit on one 8.5x11.

In Revit this is not something easily done.
A couple of options would be:
1. Export the schedule, and open it up in Excel and print from there. (the schedule will go out of Revit as a .txt file) This is the easiest, but if the schedule changes you start the process again.
2. ODBC export your Revit project. Then LINK ODBC export to MS Access or other database and do report printing from there. You can also use Crystal Reports very effectively for this. The advantage of this solution is that even if changes are made in Revit, you re-export to the same ODBC file and then simply re-run the report since it is using the new updated linked database file.

Make a parameter in your schedule called Sheet. Make multiple copies of the schedule with filters set to Sheet. Make Schedule 1 show those items set to Sheet 1. When Sheet 1 gets full, set the next group of parameters to sheet 2, filter the scheudule, etc.
Make sense?

Thanks for the ideas guys; I'll try them out.
Scott, is there a way to hide that column for the sheet parameter when I actually put it on a sheet? Also, does that solution work well if, say in a door schedule, I add more doors later? I would need to go back and select which sheet they're on and perhaps adjust all the others too, correct?

Yes, you can hide the column. I typically have a "master" schedule for these situations which is not filtered and is not on a sheet. This is where i do the "work". This one would show the Sheet column, and i could change what sheet its on there too. The sheet specific schedules will have the Sheet column hidden (find that "checkbox' in properties).
You will need to adjust if you add doors in the middle of the schedule, or just leave a few extra spaces on each 8.5 x 11 sheet just for that purpose.
