is there any way of doing a demolition legend without having to draw in demolition lines manually to represent demolished doors, walls and such?

We normally draw the existing building and use the demolish tool to show demolished elements.

I am referring to when you are creating legends. When you are using legend components from the drafting menu, how do you show say a demolished door in the legend?

Like Tobie, I use the demolition tool in conjuction with phasing to create demolition plans - which shows all demolished elements. That way I don't need a demolition legend.

Why would you have to show the demolished elements in a legend?

I open a Drafting View and use the Wall tool to draw the walls. I label them and open a view on the the sheet without the the View Title on.

How are you able to add walls to drafting views? Or legend views? I am unable to add any type of modelling component to these views.

I usually create a demo legend by drawing demo lines with the choose line tool over the existing item, then just moving the original over to represent the new or to remain item.
(To get a family to show up in a legend go to the drafting menu and pick the legend component tool, then you can choose from the pull down menu in the options bar which family you want and what view you would like to take of it, plan, elev, etc.)

I too am wondering this. I'm trying to use a legend view as a keyplan for a large building that must be tiled on separate sheets, but don't know how to bring modelling components in.

Ohh, "legend components"! For some reason I kept overlooking that part in Help.
Thanks
