Seems the demolition of windows automatically creates a infill in the window. But If I wanted to leave the opening what will I do?

You could just insert another opening in the current phase, where the old one was.

Or I can just add a demolished wall? I would like to go to the elevation draw a edit the wall and add a profile or use the split tool to create the demolished portion so that the sill will be lower and allow a egress window be added in.
I am thinking in terms as an actual contractor. Since Revit is a modeling tool and that is how it is done in the real world.

One of my wishlist items is to make the infill wall optional. You could use a wall based generic model and place an opening in the shape you want to demo, but we find that the boundary of the opening disappears when you apply a phase to the generic model. Demo tools need improving in Revit.
