The ability to place or reposition the metal deck profile in section. If you have metal deck bearing only 2" on a 8" concrete wall and have the concrete portion extend the full 8". You can't do it.

Also when cutting over steel beam, all the demos I've seen or did, the stud does not rest on the beam centerline. The deck profile was always off.

You actually have the control required for your first request. While you're editing the sketch of your slab, select a line, and look at the options bar. Each line has 2 properties for "cantilevers"- Steel (the deck) and Concrete (the rest of the slab). So for your example, you could draw the slab to the outside of the 8" walls, and set the cantilever property so that the cantilever is 6" to the inside of the slab.

Unfortunately, the cantilever direction (whether the number needs to be positive or negative) is dependent on the direction you sketched your lines- It may take some trial and error to get the location right.

Of course, you can still end up with situations like the one shown in the attached picture, where one side is correct and the other side is- well, less than desirable.

But it's a start.

The second request, this tip may be able to help you with a little, as well.

The problem really is, (in my opinion) that Revit forces us to consider detaily stuff that we maybe wouldn't have in the past- we'd have let the contractor figure this stuff out in the field....
