I created a roof using the "create" tool. The roof has a solid extrusion and several void extrusions, one of which occupies the volume the model lines for the solid extrusion inhabit. Those model lines show up on my floor plans, particularly the rcp of the level directly below this roof. I can't seem to find a toggle for visibility anywhere that can make those model lines disappear. Any help would be appreciated.

I looked at your image and see the lines in question. My question of you is where did the model lines come from and for what purpose were they drawn in the development of you create-in-place roof?
I suspect that you created some model lines in the Family for construction, which like symbolic lines are designed to behave like linework and show with the created solid or void elements you created to represent the 3D objects that comprise your model roof. Linework associated with the actual sketched solid or void elements represent the edges of the actual created object. Model lines drawn in the Family editor are meant to show as linework with the solid and void elements.
Try editing the created Roof and eliminating any model lines in the Family, but not the actual solid or void sketches.

One other note on these modeled lines is that you can change their Line Style to invisible and they would not show, assuming you need them at all for this created Roof object.

Only detail lines can be assigned to the "invisible" linestyle.
EDIT: What I mean is that you cannot have a model line and assign it to "invisible".
