I would like to use a generic family for a ceiling plan, but cannot seem to change its type to a ceiling nested family. Another option would be to switch the ceiling ref. plane and the plan view plane in the family, but that is proving equally as challenging. Any suggestions?

Ceilings are systems families, like walls, floors & stairs, railings, etc. (Though stairs and railings make use of loaded families to generate their forms). Hence, you can't create a generic model and change its type to "ceiling". As a generic family model though this doesn't prevent you from using the generic family to create a ceiling. To schedule it you will just have to use a multi-category schedule. You may also need to make use of shared parameters to schedule additional relevant information, and you should be able to assign a ceiling assembly code to a generic family. You can also make use of the description field. making use of shared parameters, type marks, and family name(s) you should be able to filter the schedule such that you only get your ceiling information.

You're other option is to create the ceiling as an in-place family (whose type can be set to ceiling) though from the sounds of it this is supposed to be a repativie ceiling component, so generic family is probably your best bet.
