Has anyone found a good way to create stairs with half log treads and log stringers other than to just make an in-place family?

What you can do is acutally make it all out of railing components. you will make a horizontal balluster that is the 1/2 log. Do a seach for stairs and phil read he had some great families using this technique.

Don't you need a stair element to host the railing, in order for it to slope?

This one uses a nosing profile to create the half-log form. But a horizontal baluster could work as well.
Here's the file and rendering.

Thanks guys, I didn't realize that railings were so versatile. I knew there had to be a way to make these stairs and still have them be a stair.

It would be nice if the factory would let us use a profile for a stringer. there are many shapes of stringers.

You can. Just associate the desired stringer profile with the railing. Oh - and turn off the default stringer in the stair properties.
See attached.
