any idea how to make smooth curves in topographic surfaces? not the triangulated topographic contours it defaults to.

Currently, a toposurface is triangulated, and you only have options to hide the triangulated edges (under the Topography > Tiangulation Edges, in visibility graphics).
If you were asking about using spline curves or arcs in place of the line segments to represent contours, then the only option I know of is to add more points to make the illusion of a curve.

Of course you can always import a nice contour cad drawing and just use Revit's toposurface to show in sections and elevations.

Create a surface in any shape, finish, then choose split surface, choose the desired surface and edit to desired shape using the line tools. Finish and delete unwanted surface leaving the desired one.
