We have an Elevation that shows the door line weights nice and dandy on screen...but in print output, it defaults to the thinnest ....can someone throw me a bone on this?

Go to settings / object styles.
Scroll down to doors & expand category. You'll see all the door linetypes and lineweights listed and are editable.
