Changing Callout tag

I want to customize the Callout annotation and have created a new callout head and loaded it into the project but I can't change from the original circle callout head to my new one. In the properties the original callout is named Callout tag with 1/8" Corner Radius, where is this located at so that I may edit/create a new one? Or is there a different way of going about changing the callout tag?

Look into Settings>Annotations>Callouts to reassign your new callout head.
