I understand that a trial version is fully functional for 30 days. What happens after that, does it revert to an unsaveable version but usable, or does it become entirely unusable?

Sorry, wish I had better news but you won't be able to use it anymore. I don't know the exact message but it will tell you that you need to register the copy to continue using it and then it will exit the program.
