How do you create a custom hatch in Revit that has two vertically offet lines, so the joints do not line up? See attached
Many people seem to use Hatchkit utility for creating hatch patterns - I did a slate roof pattern not unlike what you describe using it.
More experienced Revit users might be able to do it within Revit directly, I tend to head straight for Hatchkit now.

There's a description of how this hangs together in comments within the revit.pat text file. Patterns containing horizontal and vertical lines are fairly straightforward to construct with a text editor, those with sloping elements or larger patterns can be made more easily with a hatch pattern editor.
This 10x10 pattern has an appearance similar to your posted pattern:
0, 0, 0,0,10
0, 0,3.333,0,10
90, 0, 0,0,10,3.333,-6.667
90, 5,3.333,0,10,6.667,-3.333
The first two lines are horizontal and infinite.
The third and fourth lines define vertical lines that skip alternate courses.
