Is there a way to assign different layers to left(-) & right(+) sample lines than the centerline
existing profile?

Yes. You need to create separate styles for left and right and assign the desired layers in the styles. Then assign the styles to the offsets in the Create Profile from Surface dialog box.

You can put each offset onto it's own layer as well in the Create Profile View dialog. Simply change your Layer in the table located at the bottom when you add your offsets. The option is just to the left of the Style.
