Is it possible to model tray and coffer ceilings either with gyp board or using the ceiling command with 2x2 or 2x4 sus acous tile?

Pat,
There are a number of ways to achieve this, buts its slightly more than a one button click.
In the example, i firstly made the suspended acoustic tile ceiling. Than I made a series of walls to the depth required and copied / arrayed them to the coffer grid. Thats fairly fast to do for most ceilings.

Just as a concept...the image on the left is 3 ceilings of varying thickness and heights...the one on the right is 2

My examples are just ceilings, BeeGee's used a ceiling and walls...so neither of our examples involve in-place families which is what your question implies. You can do quite a lot with the Ceiling Tool available on the Modeling tab.
