Is it possible to have two different sets of Structural Grid in a Revit Model? One may even be a subset of a larger grid but I need to be able to control the visibility in various views. If this is not possible or straight-forward, would anyone know a workaround?

You should be able to create a second Revit project and link it as the second grid.

Or you can use a Design Option

Grids and levels can be placed in separate worksets as well.

If the previous ideas do not fit you can try scope boxes. This is one of the few things they are good for.
