out of the box parameters

Is there a way to delete the out of the box parameters when you use a family template? For example when you use a door family template it has a rough height and width parameter that I plan to not use but would like to delete it so there is no confusion.

No - the hard coded parameters can not be deleted.

In my opinion, Revit needs many more hard coded parameters to facilitate consistency in our industry from office-to-office and from manufacture-to-manufacturer.

Not only that, Revit is likely to need these parameters to validate something as a door.
