I was curious on how others do this following situation.

I have attic trusses over a garage, so my roof structure is a 2x12 with the appropriate decking. Of course this is far to wide for my roof eave which is typically a 2x8. The way i get this is stopping the 2x12 roof structure at the wall, and then doing another roof structure by extursion for just the box rake. Then I attache rake wall to the eave roof instead of the 2x12 roof structure.

Is there a better way?

Also how about when your roof structure is only a 2x4?

I find the "Copy to Clipboard - Paste Aligned /Same Place" a valuable tool for many modeling situations. In your case here I would model the roof by footprint with the overhangs, setting the thickness to the desired overhang thickness then copy the roof to the same place and change the copied roof properties to the remaining thickness of the framing member, edit that footprint back to the plate line, then in a section or elevation view move or align the copy to the common seam and join.
If you are doing horizontal eave soffits and just changing the gable overhangs, I have used the same method as you also.
