Can anyone help me with drawing a gable end roof soffit up the pitch of the roof slope. I can draw a horizontal soffit, but not on the ends.

I'm guessing this is just the soffit on the underside of a sloped roof overhang on a gable end.
You will have to draw each sloped portion of the soffit individually. Draw one half under one part of the roof, and change the line at the low end (near the eave) to be slope-defining, and match your roof slope. Then if your roof is symmetrical, you can just mirror that soffit to make the other half.
It is unfortunate that you can only have a single slope-defining line when a soffit is concerned. The same goes for ceilings and floor slabs.
