Best way to edit line weights of wall lines etc

I've noticed that my line weights seem a little thick for plasterboard on walls, ie it just shows as one thick black line when plotting.

what is the best way to edit this line weight?

If you want to change the line weight for all walls, you can go to Settings > Object Styles > Model Objects > (+) Walls > and change the Cut line weight there.

Or if you want it for a specific view, select Visibility Graphics - V V - Model categories > Override Host Layers > Select cut lines > Edit > and there you can change each layer line weight.

If you want it in more views you may want to consider creating a view template from that view and apply to the others.
