Is it normal that the windows when the are in front of the sweeps cause an interruption of the sweep and they do not "boolean substract" the opening only? See image

Yes, thats normal behaviour.
Just add a sweep over the window head to the profile required. Doesn't really take long.

If I add a sweep over the window head I will have to modify it's form each time I move the window higer or lower on the wall?
Isn't that right?

The only real problem is when the window partially cuts the sweep. If it fully cuts the sweep - no problem, the sweep stops each side of the window. If the window head is below the sweep, no problem, the sweep is then continuous.
If you're feeling adventurous, you could nest a sweep into the window family and lock the bottom of the sweep profile to the window head. ( I havn't tested this, but it should work )
Otherwise, the simply solution is to do / redo the sweeps over the window heads if they change. Depends how many instances you have.

Don't you think that this is rather good wish for the wishlist?
A better modeling behaviour of sweeps ? (including boolean substractions with doors widows etc)
It's rather stupid to have to re-adapt all over again the window's overhead sweeps each time you move the window.
