Can someone point me to a place that will let me set my text colour for a view?
Or do I have to go through and change all of the actual text styles?

If it is only for a single view and not a project wide requirement then just select the text you wish to change (individually or by window), right click>override graphics in view>by element then select your required colour. You will need to repeat for any new text you add to the view afterwards - so may be best left until you have finished notes for the view - but still not hard to do.
If it is more widespread throughout a project then it may be easier to create or duplicate a text style that reflects the style/colour you want. Because text is view dependant you can duplicate a view (with detailing) to say create a presentation view, select all text (again individually or by window - not select all instances which selects all instances in a project) and change to new style, and it will only change that view.
The temporary hide/isolate command can help with selections also.

Thanks, I was afraid of that.
Changed all the text styles and will slap the guy who made coloured text without reason when he gets back from his course tomorrow.
