Why is it that Revit has the ability to put an assembly code into a filled region, and not into a material definition? The same filled region/pattern often gets used for numerous different things. The material "Finishes - Interior - Gypsum Wall Board" is almost always used for Gypsum Board Putting an assembly code in the Materials makes more sense than in a filled region doesn't it?

I'll venture a guess that it is because Materials cannot be quantified independently of the family that contains them,and therefore that family has it's own assembly code that would override the materials contained therein. e.g. in Uniformat, C1010140 represents the total assembly including the GWB and the wood studs.

I agree. Materials would be keyed through CSI not UniFormat.
