So I have been struggling with overlapping roof forms and editing the footprints...when I determined I could cut the edge of my roof (by footprint) with an opening. But, now that I am done sketching, and things look okay, how can I edit the opening? I don't seem to be able to "select" it now that it is there.

You should be able to tab until it shows you have selected the opening...

You can also add the opening when you edit the roof as well....

ah yes, thank you. I inadvertantly discovered the "opening" and found that I could tab through. It is tricky though - kind of like edit wall joins- in that the tab doesn't always want to select the opening. but other objects instead.

I found that I needed to play with how the vertical opening differed from the face opening. In my situation I used both to acheive clean cuts (though I am unsure if techincally/construction method is correct for field). Doing the opening while making the roof sketch wasn't giving me the result I was hoping for at first. Through trial and error I found a solution with the opening tools.

Another way to grab an opening - or floor, or ceiling or site pad or whatever - is to do a crossing window (pardon the acad terminology) then use the filter tool to select it. I've often found this quicker than tabbing through overlapping geometry.

Granted, this only works if your selection window crosses only one instance of the desired entity type.
