Can anyone tell me why the footing in the attached file is extending beyond the face of the adjacent footing? If I select only two of the walls, the footing does what I expect it to at the angled wall, but once I select all three of the walls, the footing creates an extra sliver of area that obviously is not what would be done in the field. Why?

I tried changing your walls to a mitered join, but still could not get the footing to join properly. It has to do with the shortness of the middle wall.
Try going to a 3D top view and with the footings applied drag the middle wall in to make it longer. The footings will join properly once the wall reaches a certain length.
As a work-around, use the Foundation / Slab option, and sketch the footing. It will still schedule, etc.

Usually, I try to split the walls and join them back using the Trim function.
