Is it possible to run a schedule that will calculate the volume of concrete in footings & walls & slabs?

Yes.

You can produce schedules for walls and floors that will schedule the volume of each element, either as instances or total by type.

(Your footings could be walls so that you can attach to the slab if necessary. )

We have someone here is Madison that is using formulas to calculate the amount of rebar in footings and foundation walls, as well as using square footage contact area for formwork and using two different formulas to calculate cost based on square footage and volume for comparison of the two methods. He's done even more than that.
