Is it possible to place a call-out tag for a view, and then at a later time, change it to reference a different view? I have placed many tags as "place holders" for details I want to draft, but I do not see a way to change the tag after placement. Do I need to erase, and redraw the call-outs instead?

Can't be done presently. Recreating the callouts is the only way.

I am trying to change the shape of a detail call out. Is this possible?

Detail callout are only rectangular. No irrgeular shapes with a single callout are possible.

Unless you have placed callouts as placeholders in numerous locations and then intend on referencing them all to one standard detail, why not draft your detail in each of the created view and then turn off the model in the view. The advantage is at least you then could still turn on the model for reference as you draft.
