Complex Soffits

When doing complex soffits, do you draw them in the ceiling plans or the floor plans?
I did this in the floor plan and raised them up. I used a combination of walls and floors, what is appropriate to use for all ceiling types?
If drawing in ceiling plan, a floor, where does the slab start, is it reversed and starts under the floor level line above?

Model the horizontal soffits in Ceiling Plans--using Ceilings,
since that is what they are--not floor slabs.

Give them an offset from the Level below.

Use walls for the vertical portions, same way.
