If I want my library to be on the network, can I just copy and paste the folders to a network file? If so, which ones should I make sure to include? Or do I have to actually install Revit on the network? We're looking to just have individual workstations that source the company library on the network for uniformity and easier management.
Also, I've been working on a company template that sources a lot of different families, I've changed the folder locations in the settings but I'm concerned about having to manually repath each and every family in the template... is there an easier way to do this?

Thanks for any suggestions!

Usually just the Imperial and Metric Library and Templates folders. You don't have to install Revit on the network. There are other things you can put on the network such as the IES folder and rendering content. We tend not to put rendering content on our network, but it is possible.

Sounds good. So I've done that... now any suggestions for repathing my families in my template? Or am I going to have to do them all manually/individually?

Family paths are defined on each installation of Revit under Settings > Options. You will have re-path or add new library paths there on each machine using Revit.

Does anyone suggest completely deleting the template/library folders from each local server to avoid confusion/accidental mis-sourcing?
