1) instead of using the standard callout box, the gray dash line box, is there a way to customize that box???

1) Sure there is.
Change the appearance of the callout under... "Settings" -> "Object Styles" -> "Annotation Objects". Here you can change the line weight, line pattern and colour of the callout boundary and callout head.
To change the callout boundary radius and head symbol, select "Settings" -> "View Tags" -> "Callout Tags"
