I'm working with numerous Shape files all that contain street name information. I would like to know if there is a way to query or extract that information out of the individual lines?

Yes there are ways to get to that information. When you do the import make sure you create the object data. Once you have the shp's data as object data you can view it in the properties palette, extract it by doing a report query, label the roads by using annotation blocks or by query.
If you need to know how to create the object data on the import post back.

JM, I would love if you could break it down for me, it sounds like this is exactly what I'm looking for.
Thanks again in advance,

When you do the import and get to the import dialog after you select the file to import, click on the <none> under the data column, then click on the little icon that shows. Then select create Object Data and ok. After the file imports select one of the streets and look in the object property palette, at the bottom is all the info listed. Once you have the object data you can use the Annotation tools to create annotation blocks to label the streets. Depending on your level of AutoCAD knowledge as to how to proceed next. There's a few posts on my blog that might provide some info on those.
