Hi Michael,

The join / unjoin roofs button is located between the edit beam joins button and the copy / monitor button on the middle toolbar below the rotate button

If you are wanting to cut the dormer roof out of the main roof then pull back the end of the dormer, clear of the main roof, then use the Join Roof tool,click first on the back edge of the dormer roof and then on the main roof to join.
To cut out the dormer use the Modelling->Opening->dormer tool.
