Im doing an interior job and it calls for wall paneling...what could be the best way to have wall panels be modeled?

I would create a separate wall type just for the paneling. Maybe even a curtain wall so you can easly divide it.

Depends on the complexity required.
Option 1 (complex)
Create a Curtain Wall and create a panel to insert in it.
Then schedule all panel as wall instead of panel.
Moving the curtain grid will modify the size of the panels.
Option 2 (simple)
Add a model pattern to the face material needing panel.

I tried but it doesn't cut holes where my doors and windows are...and I can see it in plan across my doors...
Am I missing something here?

If I'm "building" paneling, then I create a curtain wall family, and Edit Profile for my openings - sort of like real. You can contrain edges to opening if plans are fluid.

On my project that had wood paneling. I made a wall type and then I made vertical and horizontal wall reveals.

Regarding it not adding in the windows & door openings automatically - just edit the curtain walls profile & then select the edges of these doors & windows.

after you line your exterior walls with the curtain wall use the join tool and the wall openings should transfer to both walls.

When using curtainwalls and storefront, the "proper way" to handle doors is to use a
curtainwall door curtainpanel which will work with the curtainwall system.
Or, as posted earlier, you can "embed" the curtainwall in a "normal" wall, then use
Cut Geometry to create an opening in the wall where it is cut by the curtainwall.

I built this parametrically arrayed wainscot family (generic) for a project. Since I ran into this problem recently, I also found that some are using line-based families to create paneling, and others are using floor slab edge profiles for wainscot. All three methods seem to work. With regard to interiors-specific components such as paneling, where there is no specific OOTB solution, a lot probably comes down to user preference.
