Is there a way to apply view templates to views, and then have the V/G settings for those views update just by updating a particular view template?
The reason is that I have set up templates for several of my building sections with overrides for the Structural model, but every now and then I may find another category in the Structural model that I want turned off in the view. I'd like a way to update all my views to which I have applied a particular view template, if that's possible.

Patrick-
If I'm not mistaken, i think that any view template updates are propagated to all the views which have said template set as the view's "default view template".

They only propagate when you highlight all of your views in the project browser, right click, and select Apply Default View Template.

But that's just it, I don't really want to set up a default view template, because then ALL horizontal-facing drawings take on that template, including both sections and elevations. Then I end up having to change some to a different template, which then defeats the purpose of wanting changes to a template to propagate to all views using that template.

Patrick, Create a separate view template for Elevations, Sections, and each other catagory of VIEW (not the titleblocks/sheets). Once applied, you can then select ALL of your views and hit the Apply Defauly View Template and the system will then "reapply" the correct view template to each view. If you have a few views with no view template on them, I don't beleieve it does anything to them. You might try a simply test view to verify this last assumption of the effect on a view where the default view template is still set to "none" which is what is set when the view is created.

Why do you have to physically click the 'apply view template'? Why doesn't it automatically take effect when selected in the View Properties?
