Setting Properties from fields

Is there an easy way to import a SHP and then set the properties of an entity from the fields that are attached?

For example, I have a contour shape file and the contours (plines) have the elevation attached in a field named countour. Is there an easy way to set the elevation property of each of these contours using the data in the field?
