How do I go about adding a new family category to a project? For example I want to have a Category for example (roof trusses)!

You can add subcategories in the object styles dialog box (Settings -> Object Styles) Hit the New button on the lower left and define the name of the subcategory and what category you want it to be sub to. To assign it to a family Select the Family -> Edit (from the options bar) Right Click -> Properties on the Extrusion or whatever and set the Subcategory to your newly created one -> OK -> Finish Family. Note: Only the Subcategories defined for the Family Category your Family is assigned to will be available. If your family is made up of multiple extrusions, sweeps, blends, etc. each one can be assigned a different subcategory by the same method.
what is the value of doing that may is ask? (ignorant to the actually application of that method)
Arguably the most common use is to control visibility settings independent of the Family Category.

You can also take advantage of making different linetypes, scale and/or color under that sub category as well. But the main is visibility.
