You can open the family and check the properties of the sample host object. Check to see if it's a wall, floor, ceiling, roof and that should tell you which type of host it requires. If it says it's an 'extrusion' it's a face based family.
You could also do this by creating a simple file with a piece of wall, roof, floor and ceiling in it an try to place the family. If it only works on one element then it's 'hosted' by that one (wall, floor, roof or ceiling) if it sticks to anything then it's face based.
So if I click on the host and it says modify extrusion, then it is more than likely a face based family?

No. Any extrusion that you click on in a family will give you the option to edit it.
What you can do is simply load the family into your project and try to place it. If it's face-based, it will give you the option at the top to either place it on a face, on a workplane, or on a level.
Can we ask what families you are looking at?
