I have an existing grading/surface object in cut and I would like to fill with 1:6 on East, West and South and 1:3 on the North side.
Is this possible?
What footprint should I use to achieve this?

You will need to edit that grading feature (grading objects are in
Land Desktop) and add a slope range to that segment you wish to
be different.
You might find this is easier to do in Land Desktop with the Grading Object first.
And then perform the similar operation in 3D with the grading Feature so that
you may contrast how these two tools function.
Even though technically the grading feature (civil 3D) is nearly the same in functionality
as the grading object in Land.

I've not had a project to use the Civil3D grading object/system stuff yet, so I probably won't be of much help, but I'm interested in your progress. Can you give some more info on what you're trying to do, and what you've tried?
It sounds like you're trying to grade a flat platform down to the existing surface, but with a 6:1 batter slope on one side and 3:1 on the others.
Is this all you want, or is the problem more complex than that?
Michael Farrell's suggestions sound like they should work. Once you have the slopes set up you should be able to move the whole thing up and down to achieve cut or fill as you want.

Even more exciting is that once he sets his slope regions as desired
the grading feature, includes a tool that will allow the user to achieve any
desired earthwork balance for that particular grading feature.
Or one can as you say raise or lower that feature in user defined steps
until it meets the design criteria. It's really pretty elegant.
