Default How to assign categories to text?

I have been trying to build a title block for our office. We have a "preliminary not for construction" stamp that goes on our drawings untill we submit. It is then turned off when it gets submitted. Same with the stamp. The stamp gets turned on when the plans get submitted. There are categories called stamp and one that I created called Preliminary Stamp that can be turned on or off in the visibility dialog. I can assign lines to a category but I can't assign text. How do I do this? Am I approching this the best way?

    I have 2 titleblock families....
One has the seal - one doesn't. The not for construction is our "Project Status" parameter....

When we want seals - right click on the family in the titleblock for the "Titleblock - No Seal" and select all instances. Once they are all selected use the pulldown to change them to "Titleblock - Seal" Print. Then set them back to "Titleblock - No Seal".

Thank you for your help. Dang that was fast. That worked perfect. I am still confused as to what the categories are for if you can't assign all elements to a category. Am I thinking to much like Autocad. There is a category called stamp. What's that to be used for?

Actually they are subcategories. You can't make new categories. The subcategories are for linework as you've discovered. Labels are in the labels category (and can't be changed) Text is in the text notes category (and can't be changed).

Now text and labels do have a visibility parameter. You can use that linked to a parameter to control visibility - either globally, by instance or by family. See attached.
