Does anybody know how to make a pad for a rooftop unit that stays level at the top where the unit sits, but where the bottom will automatically align to the slope of the roof structure that it sits upon?

Well, a wall attaches to roofs (bottom or top of the wall). I have used "pad" walls for this. Set a level for the pad elevevation, sketch a wall from that level down to the roof, attach wall bottom to roof. Just have to make the pad wall type as wide as you need and as long as needed when you sketch.
That looks good for a level pad on the roof. However, it's often that we use a manufactured metal sloped curb instead a built up level pad.
Roof curb..model in place family, or like joel said a wall that is trimmed to the roof..I would never want someone to install an rtu sloped...nope..not this guy. Give the slope and the specs to the manufacturer and let them figure it out...lol..see what they spit out.
