I have a wall that has 2" of rigid insulation. I select the material, choose pattern in "cut pattern", and the only options I get are "drafting" patterns.
Is there a way to have it so I can choose a "model" pattern?

Not directly.
The HatchKit AddIn for Revit can clone a rescaled drafting pattern from a previously loaded model pattern for you.
