Insert a Field
Field category: Document
Field name: LastSavedBy
or insert %<\AcVar LastSavedBy>% into text.
Nothing to really do what you want, short of O/S level version control.
I'm not sure where the OpenDesign group is with adding this to DWG at this time.
As described here, they were working on version control along with multi-user editing, which should include user tracking.

The method Tom suggests will not give you a complete history, just the last user. That may be all you need. If you want to track the complete history, you need a document management system. Autodesk has Vault. We use Adept from Synergis Software.
My CadTempo software will give you a complete history of who accessed a file and when. However it does not record what changes were made.
