Aaron, not sure if I understand completely. A little vague (PITA..???). But under settings/annotations/arrowheads is where the global change can take place. By default everthing uses the "arrow 30 degree" so I normaly just change that.

If you load a generic annotation with several family types, the arrowhead for its associated leader will be set to "None". Now you have to open the properties of each symbol you place, and set the type of arrow you want to use.
With over 250 keynotes, this can take a while to do. Settings->Annotations-Arrowheads doesn't affect symbol leader settings.
And that is what is called a "PITA"!!!
