2006 Customization - Assistance with CUI files, Workspaces etc.

Does anyone know of a good central source to get an explanation of how the new Customize User Interface dialog works?

The online help just provides some sporadic clues with no decent overall explanation of how the different components (Workspaces, cui files, etc.) interact.
