But Revit can't presently do it

Only the factory could tell you that, and I doubt that they will.

Hmm... no, this is fine for now. I'm also noting that you can't snap nearest to an ellipse either -- only the points that define the ellipse, and any endpoints if it's a partial ellipse.
This isn't a wish, really... it should be possible. I don't like seeing any geometry on the screen whose outlines cannot be snapped onto. Not critical I suppose but presents me with a very immediate problem.
I don't know what it is you want to do exactly, but as a workaround to snap to an ellipse, create an extruded in-place wall by picking the ellipse, then you can snap to that, create lines or RPs etc, then delete the wall.
