we have layer structuring for :floor plan, ceilling plan, roof plan, and seperate group for sections and elevations.
why else would there be a tool called 'LAYER MANAGER'.... layer management is the quintesential mark of a good caddie and makes the world spin easier when other drafters can open another's drawing and not have the first thing out of their mouth be "WTF!!"
layers are not 'aesthetic', they are a necessary tool for drawing organization!!
now, for real fun, let me know why i shouldn't put my viewports on the Defpoints layer....

I only use layer 0 when creating a block that has to have different appearances in different situations i.e. a component that is red when it is first installed but has to be grey to represent existing in future drawings. I just make a global change and all my blocks follow suit I don't have to change each one individually.

Even me as a complete novice has a good idea why layers are a good idea.
Found that out when I was trying to remove a cloud from an old drawing (This was in Micro$tation, but the principle is the same) so I could do a minor mod. I was having to select each individual arch and delete... very tiresome when the stuff beneath kept getting selected too. Discovered I could turn all the other layers off leaving only the cloud layer, which could then be selected quickly and easily and deleted. Switch the other layers back on and I'm ready to start.
You can use that as a very basic example, from a very basic CAD user
